Do not be concerned over the cropping of the original photos - especially for the portraits.
These are merely 'proofs' and the when the photo was taken it was important to leave enough room on the top and bottom, so regardless of the final print size the subject would not be 'cut off'.
This photo shows the difference between a 4x6, 5x7 and 8x10 print size.
